The historical sweet desert wine. Harvested grapes are spread out in the sun to dry until their sugar density reaches 19-23 Baume. Once achieved, the grapes are crushed and fermented until the process stops naturally due to the high sugar content. The must is then aged in oak barrels for a minimum of two years. Similar to the solera system, the barrels are never completely emptied. New juice is added to the barrel containing old juice and the process begins again. St. John Commandaria is a sweet wine with a powerful bouquet filled with dried fruits, spices and oak. It is luscious and full-bodied.

Deep and dark colour. Very complex nose of mature fruits with a touch of wood. Fat attack, beautiful tannic structure and long aftertaste. The beautiful old 18th-century building (formally the stables and cowshed) was renovated in 1993 and is now used to age the wine in barrel. The technical installations were entirely renovated starting in 1990. Since then, fermentation has been carried out in 18 temperature-controlled, stainless-steel vats all equipped with a temperature control system. The final blending is made about two months after the harvest. The whole winemaking process is very traditional. After fermentation, once vats have been selected for blending, the wine is aged in oak barrels for 15 months. During that period, the wine is racked 3-4 times. The aim of this process is to separate the wine from its lees. This is carried out from barrel to barrel, and the clarity is checked by stopping the flow, filling a glass of wine and holding it up to a candle. Once it starts to look cloudy, the racking stops. The wines of Château Les Ormes de Pez are powerful and well-balanced. They are typical of the appellation: rich, round and quite tannic.

100% Grenache. 13 grape varieties are recognized for Chateauneuf du Pape. Chapoutier's is made with a single grape variety, which is one of its particularities. The terroirs is a quaternary terrace, with a surface of rolled stones coming from the former bed of the Rhone. The grapes are carefully selected during the harvest; this selection is compulsory for the wine to be given the Appellation. Vinifaction in vats made of concrete covered with epoxy resin, because grenache is very sensitive to oxidation. The grapes are 100% destemmed before being placed in vats. Fermentation lasts from 15 days to 3 weeks at a temperature which does not exceed 32 degrees C. Matured in oak barrels and vats for 12 to 15 months. Colour : Deep purple. Nose : Complex and subtle, blackcurrant, plum, followed by roasted coffee, cinnamon, cherry, morello cherry and liquorice. Bouquet : Spicy aromas developing into animal scents. There's a spicy, cinnamon note to the palate, with pineapple and grapefruits as well. Acidity is high, and the length is creamy and complex. Drink 2005-2035. 2003 Vintage - Outstanding - This vintage saw an unusually long growing period with an enormous heat summation over the year. The wines are intensely fruity with very high sugars and more subdued acids than 1999. Luscious wines with quality levels comparable to the those of 1999. Another outstanding year to follow 1999.

Pio´s Barbera is a wine quite different from many other Barbera. This is because the Barbera grapes are grown alongside the Nebbiolo grapes. This, combined with the extensive barrel ageing, results in a wine with the strength and wild energy of a Barbera, but the refined elegance of Barolo. Pio Cesare Barbera is a unique Barbera full and brave, yet soft and supple. Pio Cesare Barbera has an intense ruby colour with garnet reflections. The bouquet is distinguished and vital, with fresh, ripe fruit. The palate is clear and definite, with hints of ripe pulpy fruit, cherry, and notes of chocolate, frame with a long and pleasant finish. The grapes come from selected vineyards in the villages of Monforte and Castiglione Falletto and from grapes in Pio´s vineyards in the villages of Serralunga and Treiso. The fruit undergoes a careful selection to eliminate all imperfect grapes. The vintage takes place around mid-October, just a little before that of Nebbiolo grapes for Barolo and Barbaresco. Fermentation takes place for 10 to 12 days at a temperature of 24-25 degrees. Ageing occurs for two years in French oak casks of various sizes (25 to 55 hl) and in a small French oak barrels.

From old vines (greater than 30 years old), yields are not allowed to exceed 1.5 Kg per vine. Only fruit with phenolic maturity is picked, or grapes with concentrated, intense aromas and a depth and complexity of palate flavours. The fourteen Tempranillo vineyards are located near Haro, the historic heart of La Rioja Alta. Sustainable farming practices are utilised (no herbicides or pesticides), excess buds are eliminated and, when necessary, buds are grafted from RODA's own rootstocks. Bunches are carefully selected before the grapes are meticulously sorted on a table. Vertical 'basket presses' are utilised to crush the fruit in the gentlest manner possible. A 'cold soak' is utilised to extract optimal colour and tannins, high temperature fermentation (up to 30 degree C), long macerations, and traditional Burgundian techniques 'pumping over' and 'stirring of the lees' extract the finest primary material from the grapes. Shows big, black cherry, blackberry and wild herb aromas and dense, powerful, spicy and mineral fruit on the palate. RODA I is a wine with serious structure, harmonious, balancing acidity and ripe, soft tannins. Serve at Room Temperature.
